The humble Gin and Tonic is not what it once was: bottom shelf gin with tonic from a soda gun, garnished with day old limes with a brown spot or two. Thanks to a renaissance period in the world of craft gins and the flair and popularity of the Spanish Gin Tonic, this drink has carved out a category of its own.
If you've ever had the pleasure of sitting in front of a "Barman" in Spain while he/she whips you up the country's national drink, you understand. The flair and ceremony is unique to that of a tea ceremony in Japan. Everything from the glassware and ice to the tonic and gin are meticulously selected for the precise pairing of flavors. But what really sets it apart is the carefully placed garnishes (when done right) that bring the drink alive in the glass. The aromatics are amplified in the traditional goblet style vessel. The care used by the master at work makes you wonder why you've waited so long to fully understand this easy, yet magical, drink.
Join us as we welcome Michael Rooney of Vaca in Costa Mesa to lead us through a lesson on gins, tonics, pairing, and garnish selection. After nearly three years rotating out the seasonal menu of Spanish Gin Tonics at Vaca, he has tried literally hundreds of combinations in search for perfection. George Mosa will provide dinner, as always, to compliment the night's cocktails.

Space is limited to 40 people. Sign up online by clicking HERE or in store. Spots will be saved upon receipt of payment. In the event that you cannot attend, classes are refundable (if cancelled 48 hours prior to class time, parties of 4 or more need to provide 72 hours notice for a full refund). Credits will no longer be offered. No refunds will be granted for no-shows. Wait list will be filled on a first come, first served basis. Parties of 5 or more should advise the store via email or phone so we can accommodate seating together with the rest of your party, especially if you purchase tickets separately. We will happily accommodate dietary restrictions if notified 2 days prior to class date.
